Reconsider paths used in app.ini / compose.yml wrt. paths Gitea needs #12

See https://git.autonomic.zone/coop-cloud/gitea/issues/11. I avoided using a full copy of https://github.com/go-gitea/gitea/blob/master/custom/conf/app.example.ini so that it might be easier to manage but maybe that is going to mean we're haunted by errors about paths and so on that I haven't included in the config and the defaults don't work. I am not sure. Something to look into.

Hmmmm, I think I'd rather manage a few path config lines than hundreds of lines of configuration and a really large config space because the Gitea feature set is really sprawling. We keep relying on majority of defaults then 🙏
