Missing S3_ALIAS_HOST env var #18

It's odd as I've been using it, and it's been working in the old recipe, but doesn't look it was defined there either... maybe I had a chaos version running, as I ran out of steam on it at some point.

Now I moved on the v4-based version, and <4 is going away soon I think... we can just focus on that one.

Basically just needs adding S3_ALIAS_HOST to compose.s3.yml I think.
