Until https://github.com/nextcloud/docker/pull/588 is merged, the Nextcloud image gets super confused if you don't have /var/www/html mounted.

We could either hack around the /var/www/html/version.php check or try and chase that PR through (or both!) - in the mean-time a rueful extra bogus volume might be needed :/

(The observable problem is that after you redeploy the stack you see an infinite loop of error messages about not being able to find the maintenance:install command)
