Merge chore(deps) and release a new version #80

Hi @decentral1se ,

what is the best way to start merging the chore(deps) and releasing new versions? I currently use the main branch to be able to use the user_oidc, which works fine so far. Plus the updates to the nextcloud image would be welcome.

I'm also happy to test it - I have two test instances, and one that I use for (personal) production.

We just need a little push on #57 @ineiti, if you have some cycles? You could come up with a MAINTENANCE.md based on existing templates (traefik, rauthy, etc.) and try to gather feedback from the others on that issue and in the git log who commit to this recipe. It's a bit of organising work but will be worth it! I am not hosting nextcloud soon so I won't be maintaining this for the time being....
