unknown handling when writing to .env #715

E.g. TYPE=custom-html:unknown

I ran into this when I ran an undeploy, then cancelled it and ran undeploy again quickly. The stack was already down, so there was no version to discover. However, unknown will explode on the next deployment.

My intuition is to just throw this value away and rely on what was already in the .env file?

Thoughts?
