make mail_key optional
make secret version keys optional for optional services (mailisearch etc)
add ghost env vars
remove env vars from .env.sample which shall not be modified anyways. put defaults in compose.
restructure a little bit, sections for search, DB mail, etc.
remove uncommented stuff from compose files
put postgres in own compose
put SONIC_PASSWORD in secret
