Similar to the s3 configuration I added to https://git.coopcloud.tech/coop-cloud/hometown in coop-cloud/hometown#14 and coop-cloud/hometown#19

The current .env.sample looks like you can enable S3, but the nothing is actually set up in compose.yml, no vars and no secrets.

... but with even more options specified (from https://docs.joinmastodon.org/admin/optional/object-storage/#environment-variables-for-s3-api-access)
